The Soča Valley conceals within it so many beautiful, interesting and fascinating elements and it would be a shame to miss a single one, so we’ve prepared something for the taste buds and something to delight the eyes. The recipe tells how to cook authentic Kobarid dumplings according to our grandmother’s recipe and the colouring book tells of the fairytale about Krn and Krnčici, the true love of the mountains that still thrives in this region today.

Recipe
Below you'll find the method for preparing Kobarid dumpling according to our grandma Pepca's recipe. In every morsel, try to capture the sweetness of our region in the dumplings and on your tongue. These dumplings are one of the ways that we have and will continue to indulge ourselves in this region.
Dough: approx. 1 kg white flour, boiling salted water, a little oil (optional)
Filling:
- 30 dag blanched ground walnuts with milk or cream
- 15 - 20 dag raisins soaked in water and rum
- 30 dag breadcrumbs fried in butter
- around 20 dag sugar or according to taste
- few tablespoons of melted butter
- a little cinnamon
- a couple tablespoons of chocolate powder (optional)
- lemon peel
- 1 - 2 tablespoons of rum
- vanilla sugar

Mix together the ingredients for the filling until it is thick and then shape it into a ball or roll.
First pour the boiling salted water over the flour. You can then add one or two tablespoons of oil and then stir the dough with a spoon and then by hand when it has cooled a little. Make a roll and cut it into equal pieces and then flatten the pieces with your hand. Place the filling on the dough circles in the form of rolls. If it is easier you can use a spoon to do this. Close the dumplings in a semicircle. Make a dimple at the dumpling's centre with your finger to give it the characteristic Kobarid dumpling look.
Cook them in boiling salted water for about 20 minutes until they rise to the top and there are hungry mouths eagerly awaiting them. Lightly shake the container several times during cooking. Drain them well, cover with melted butter that you have browned breadcrumbs in and sprinkle with crystal sugar or ground walnuts.
